Concept package: €2,350

A corner unit with street-facing windows and a constrained 42 m² footprint. The owner needed maximum seating without blocking natural light or creating queue congestion at the entry.

Challenge: Original layout placed the counter perpendicular to the window, blocking 40% of street visibility and creating a queue that spilled onto the pavement during morning peak.

Solution: We rotated the counter to a linear configuration parallel to the window, repositioned the espresso station 1.2 m from the entry, and introduced a window-side banquette with six two-tops. Power routing was consolidated into a single wall chase, reducing MEP costs by an estimated €1,800.

Concept package: €4,150

A ground-floor unit in a converted warehouse with exposed ceiling beams, uneven floor levels, and a kitchen pass located at the rear with no sightline to the dining room.

Challenge: The existing kitchen pass was invisible from 70% of dining tables, causing service delays and guest frustration. The owner also needed accessible seating compliant with DL 163/2006.

Solution: We reconfigured the dining room into three zones — main floor (38 covers), elevated platform (16 covers), and accessible ground-level area (8 covers including two wheelchair-accessible tables). A mirrored panel at the pass corner restored sightlines to all tables. Banquette seating along the perimeter increased cover density by 18% compared to the owner's original loose-table plan.

Concept package: €3,100

A narrow rectangular unit in a historic building with 3.2 m ceiling height, brick walls, and strict heritage facade constraints. The operator needed a bar interior that supported evening service without centring the design around beverage branding.

Challenge: Hard surfaces (brick, tile, concrete) created reverberation times above 1.4 seconds — guests reported difficulty holding conversations above 21:00 when occupancy exceeded 40 people.

Solution: We designed a three-layer lighting scheme with dimming zones for 18:00, 21:00, and 23:00 service transitions. Acoustic absorption was integrated into ceiling baffles and banquette upholstery, targeting RT60 under 0.8 seconds. Back-bar storage was reorganised into vertical zones, freeing 2.1 m of bar counter length for guest-facing service.

A bakery expanding into a hybrid retail-and-seating model. The owner needed a layout that separated the retail display from the seating area while maintaining a single service counter for both functions.

Challenge: Retail customers and seated guests shared the same entry, creating congestion during weekend mornings when both traffic streams peaked simultaneously.

Solution: We introduced a split-entry concept with a dedicated retail path (display case → checkout → exit) and a separate seating path (entry → order → seating). The service counter was L-shaped to serve both streams from a single operator station during low-traffic periods and two stations during peak. The 3D visualisation pack was used for landlord approval of the split-entry modification.
